I was so excited this week to discover that well-known Vancouver food writer Erin Ireland is now VEGAN! I was so happy to hear this because she has such a great platform for spreading the vegan word and for sharing all of the delicious plant-based dishes you can find in Vancouver restaurants.
I was taking a look at her blog and discovered a recipe for Chocolate Covered Chickpea Cookie Dough Balls. Yum! And as it turned out it was perfect timing as there is the Loka Yoga Vegan Potluck tonight. So, of course, I had to make them!
They turned out well, and although I found the chocolate dipping part a little tricky, they were easy to make overall. Next time I would add a little more cinnamon to the dough, as I LOVE cinnamon.
Now I have to try not to eat them all before the potluck!
